- ½ cup (113g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- ½ tsp almond extract
- ¼ cup (60ml) maraschino cherry juice
- 2 cups (250g) all-purpose flour
- ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup (120g) chocolate chips
- ½ cup (80g) chopped maraschino cherries
- ½ cup cherry preserves (for filling)
- Pink food coloring (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream butter and sugar until light and fluffy.
- Beat in egg, vanilla extract, almond extract, and cherry juice until well combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually mix into wet ingredients.
- Fold in chocolate chips and chopped maraschino cherries. Add pink food coloring if desired.
- Scoop dough into small balls, flatten slightly, and add a small amount of cherry preserves in the center. Cover with another small piece of dough and seal the edges.
- Bake for 10-12 minutes or until edges are set. Cool for 5 minutes on the pan, then transfer to a wire rack.
